new year dietEvery year, I determined that I want to get down to a reasonable weight. I’d buy diet foods, avoid things that tasted good, and often heroically went on a minimal calorie diet. It never lasted past January 31st.

You can probably see the mistakes I made by the paragraph above. That sort of diet *can’t* last. It’s too difficult, plus it’s extremely unhealthy. You can develop a lot of problems following those rules.

Why do I have the first sentence in past tense? I don’t do that anymore, and on top of it, I’ve lost weight. I’m not down to my goal yet, but I’m getting there.

There are several rules that aren’t always well known when it comes to this resolution. Forget the fad diets, get rid of the tasteless junk and come out swinging. Here’s what I do:

Avoid Scales: Getting on the scales daily can be a subconscious negative. Weight varies from week to week and day to day. Pick one day a week and one specific time of day for weighing yourself. If you are doing it correctly, you will lose one to three pounds a week.

Counting Calories, Eat Enough: Count what you eat and what you do. Don’t forget sleep, as you still burn them then. Keep the difference at no more than fifteen percent, or you could find yourself in starvation mode.

Exercise: It’s hard to lose weight if you don’t do something that gets the blood pumping. Find something you like, then do it regularly. You’ll be surprised at how well this fits into your life.

Food Diary: This will help keep you honest. It’s hard to cheat on your diet when you have to write down everything you put in your mouth.

New Comfort Foods: You may be surprised, if you look hard enough. There are many recipes that provide the “comfort food” feeling without the fat, salt and sugar in your current favorites.

Prevent Boredom: This is both for what you consume and how you exercise. Boredom is one of the most insidious enemies of a healthy lifestyle. Find three different things you like to do. As an example, say you hike one day, do weights next and follow it by some sort of aquatic program. You’ll see new things and work different muscle groups. So the same with your food. One can only stomach so much chicken…

Taste is Important: Bland is not necessarily the only flavor you can have. Find healthy alternatives and try new things. One that we have been experimenting with lately is aged balsamic vinegar. The cheap stuff just does not compare, and it is part of a very healthy salad dressing when mixed with olive oil. As the commercial says, “Think outside of the bun.”

You may want to have a talk with your doctor before following these suggestions. This will help you avoid injuries and get the most out of what you put into your new lifestyle.

It is when this muscle is weakened due to certain factors discussed further on, that stomach juices can get back into the esophagus (this is the definition of acid reflux), damaging the interior and provoking heartburn. In medical terms, this circular muscle is the lower esophageal sphincter (LES), and the ailment is gastro esophageal reflux disease. The LES is the valve or circle of muscle closing off the esophagus from the stomach.

Factors responsible for GERD may be direct agents causing the condition, others worsening a condition that already exists. There are both principal and secondary factors that contribute to GERD, and there are also complex interconnections between them. These causative elements include:

Undue production of gastric acid. In many instances (often because of inherited characteristics), the human organism may over-fabricate stomach acid that then overflows back into the esophagus to corrode lining cells.

Excessive multiplication of Candida. In certain instances, Candida can demonstrate far too much growth, swamping out the immune system and generating over 79 varied toxins that can cause the body impairments in various ways, GERD being one of them. Candida is the mono-cellular fungus found in any case in the human body (mainly in the areas of the genitals and the intestinal apparatus) in amounts that are symbiotically controlled by the rest of the body’s natural internal flora.

As well as this, it is a known fact that certain foods are the main culprits together with white flour and sugar (and other refined carbohydrates of this type) in stimulating Candida over-multiplication. These dangerous foods include most kinds of vinegar, including balsamic vinegar, wine vinegar, white vinegar and malt vinegar. The reason is that all these vinegars are acid-forming when ingested and so push up the level of acidity of the intestines and the blood. This then leads to acid reflux and increases its degree of severity.

However, the exception to this is organic apple cider vinegar. It can significantly reduce esophageal inflammation and maintain Candida at the right levels. It can also alkalize your digestive apparatus (and is the only vinegar capable of this).

The sole dependable way to avoid the recurrence of heartburn is to tackle the internal factors that are fundamentally responsible for the acid reflux. But it should be noted that no instant solution for heartburn itself exists because this ailment is brought on by a combination of the internal factors.

There are hundred of different seasonings that you can use for any number of different dishes, but what are the seasonings that you absolutely have to have on hand? Balsamic vinegar originates from Italy and enhances the flavors of many dishes. However, what you find in supermarkets is very different from traditional balsamic vinegar produced in Italy. Do not be confused and think they are the same.

Firstly, Traditional Balsamic Vinegar can legally only be produced in regions authorized by the Italian government. There are only 2 such regions in Italy, and Modena is one of them.

Balsamic vinegar starts with the Trebbiano grapes. These grapes are grown in Modena so that they can be harvested under the most favorable conditions. After they are harvested, they are gently crushed into juice and cooked over an open flame under very specific conditions over a period of 30 hours until most of the liquid has evaporated, leaving a thick syrup called “must.” This long process requires skills and precision that is passed down for generations.

When cooled, the must is paired with an older vinegar called the “mother” and stored in wooden casks. These casks can only be made of specific types of wood, namely mulberry, chestnut, acacia, oak, cherry and ash. While the vinegar is aging in the cask, each kind of wood infuses the vinegar with a unique subtle flavor. These casks are then stored in attics so that they can be exposed to the naturally alternating hot and cold climate of Modena, Italy. This change in climate over the years is essential to the aging process of the vinegar.

As the aging process plays out, the vinegar intensifies in flavor and aroma. A portion of the vinegar evaporates and hence it is transferred into smaller and smaller casks. The process of transferring casks requires precision and intense effort, and is carefully executed every season until the vinegar reaches 12, 25, 50 and 100 years old and is ready to be bottled.

However, the manufacturing process does not end here. Only an exclusive consortium comprising of a hundred select families can produce true traditional balsamic vinegar. To ensure that the product is of the highest quality, the vinegar must be certified to prove that it has undergone the strict production process and is worthy of the Consorzio label. A panel of 5 expert tasters tastes the balsamic, which has been aged for at least 12 years. This is to make sure that the product conforms to strict criteria regarding appearance, smell and taste. If it contains the slightest flaw, it cannot be bottled.

If the vinegar passes the expert panel’s taste test, the bottle is sealed with the consortium seal and Italian government designation D.O.C. (Denominazione di Origine Controllata). Since only about 3000 gallons of traditional balsamic vinegar is produced each year, every bottle is registered and numbered to guarantee its authenticity.

This rare condiment also contains many surprising healing properties. Since it comes from grapes, it contains antioxidants and important minerals which can fight against heart diseases, prevent anemia, boost the digestive system and suppress appetite, which can help with weight management.
