Hi, does anyone know how to make your own salad dressing using balsamic vinegar? I bought some balsamic vinegar, and tonight I put it on my salad with a little bit of oil, but it tasted nasty. very sour and strong. anyone know what else i can add to it to make it taste better?

Balsamic Vinegar Dressing

Serves/Makes:1/2 cup

* 1/4 cup (60 ml) balsamic vinegar
* 1/4 cup (60 ml) olive oil
* 1/2 tsp (2 ml) salt
* 1/2 tsp (2 ml) oregano
* 1/2 finely diced shallot

* Add up all the ingredients and mix. I put it in a covered container and shake it up really well.

I just made this up at home and it is really tastey! You can increase or decrease some of the ingredients to your liking. Bleu cheese goes really well with this also. I like to crumble mine up into the salad. The dressing and bleu cheese compliment each other very nicely!!!

Balsamic Vinegar Salad Dressing

1/4 cup balsamic vinegar
1/4 cup extra-virgin olive oil
2 tablespoons fresh lemon juice
2 teaspoons soy sauce
1 teaspoon sugar
3 to 4 garlic cloves, mashed to pulp with 1/2 teaspoon coarse salt
Freshly ground pepper to taste

Combine all ingredients in a bowl and whisk until well blended. Store unused portion in covered container in refrigerator.

Makes 3/4 cup.

    Simple Balsamic Vinaigrette Dressing Recipe

    INGREDIENTS

    3 tablespoons aged balsamic vinegar
    1 teaspoon Dijon mustard
    1 garlic clove, peeled and crushed through a garlic press
    3/4 cup extra-virgin olive oil
    Salt and freshly ground pepper, to taste

    Use a blender to mix the ingredients. It will produce a thicker vinaigrette dressing. One serving will equal 2 to 3 tablespoons of dressing. One cup should easily be enough for 6 to 8 servings of mixed green salad. Refrigerate and store in a covered container. Whisk well before serving.
